In a skillet over medium heat, cooked the seasoned chicken breasts for about 6 minutes per side until fully cooked through.

In a 6-quart Dutch oven or pot, melt butter and sauté the celery, carrots, and onions. Then add garlic and thyme and cook until fragrant.

Add flour and stir to coat the veggies. Then, gradually add chicken broth until dissolved. Simmer until slightly thickened.

Add half-and-half and return to a boil. Then add gnocchi and simmer until cooked through and thickened.

Add spinach and the cooked chicken. Simmer for an extra minute.
