Preheat oven to 350 degrees F. Whisk flour, baking soda, and salt.

In a large bowl, whisk egg, granulated sugar, oil, buttermilk, vanilla extract, and lemon zest until evenly combined.

Mix dry ingredients into wet ingredients until no pockets of flour remain. Do not overmix.

Thoroughly pat dry strawberries. Toss with about 1 tablespoon flour and toss to coat. This prevents the strawberries from sinking in the batter.

Fold in the strawberries into the batter until just combined.

Pour the batter into a greased 9x5 inch loaf pan. Top with extra strawberries for decoration.

Bake at 350 degrees F for 60-65 minutes. Tent with foil after 45 minutes. Let cool completely and remove from loaf pan before slicing. Enjoy!
