Let's get started!
Sauté onions, garlic, and Italian seasoning until fragrant. Add flour to coat.
Add broth and stir to dissolve. Then add the canned diced tomatoes. Simmer.
Using an immersion blender, blend the soup until smooth and evenly combined.
Add tortellini and simmer for about 8 minutes, or until cooked through.
Stir in heavy cream and combine, until smooth and creamy, and simmer for an extra minute or so. Season to taste.
Stir in the baby spinach until softened and incorporated. Season with more salt and pepper to taste. Enjoy!
