Season a bone-in pork shoulder with salt and pepper. Sear in a large 8-quart Dutch oven until golden brown on all sides.

In the same Dutch oven, cook the onions, garlic, and fresh herbs. Deglaze with wine.

Add the chicken broth, mustard, and fresh apple cider. Season. Return pork with herbs.

Cover and braise in the oven at 325F for 3 hours. Then, add the sliced apples and cook for another 30 mins.

Shred with a fork. It should be fall apart tender. Serve with mashed potatoes.
