Let's get started!
In a bowl, combine all the meatball ingredients. Shape into 1-inch balls.
Sear meatballs on all sides until golden brown. It should take about 3 minutes.
In the same pot, saute the carrots, celery, onions, and garlic until softened and fragrant.
Add the broth and water, and return the seared meatballs. Stir in acini di pepe pasta. Season with Italian seasoning, salt and pepper. Simmer for 18 minutes.
Stir in the spinach and cook for a few more minutes until softened.
Garnish with some freshly grated parmesan cheese. Enjoy!
