Season the chuck roast with salt and pepper. Sear in a large 6-quart Dutch oven until golden brown.

In the same Dutch oven, cook the onions, celery, and aromatics with tomato paste.

Add the red wine and bring back to a light simmer.

Add the beef broth, worcestershire sauce, herbs. Return the seared beef.

Braise in the oven at 300 F for 2.5 to 3 hours. Then add mushrooms and carrots and braise for another 30 mins.
