Dissolve yeast and sugar in warm water (110-115 degrees F). Let sit 10 min. If it foams, it's active. If not, discard and start over.

Add flour, salt, yeast mixture, honey, cranberries, walnuts, and orange zest. Stir. Cover and let sit at room temperature for 18 hours.

After 18 hours, transfer to a floured surface. Don't punch dough.

Fold the dough into a ball, transfer to parchment paper, press to re-shape. Cover and rest for 30 minutes.

Preheat a Dutch oven at 450 degrees. Transfer dough to the hot Dutch oven, score a pattern on top, and bake for 30 minutes.
