Melt butter in a pan, and cook down the apples, spices, sugar, lemon zest, and lemon juice until softened.
Roll out the puff pastry sheets and cut into equal 5 inch squares.
Place a little bit of filling on each square and fold it over to seal the edges with a fork.
Brush the assembled turnovers with egg wash and cut slits on top.
Bake at 400 degrees F for 20 to 22 minutes. Let cool slightly and serve!
