Mix all the marinade ingredients (listed in recipe card) and marinate chicken thighs for 30 minutes.

In a large deep skillet or Dutch oven, sear the marinated chicken thighs. until golden brown and crispy.

In the same pot, cook the aromatics, and add the rice along with tomato paste and canned diced tomatoes.

Add chicken broth and return the seared chicken thighs into the skillet.

Cover with the lid tightly and finish in the oven at 350F for 30 minutes, until tender. Serve with cilantro.
