Preheat oven to 425 degrees F. Thoroughly wash and peel the carrots. Optional: keep the carrot tops intact.

Toss with olive oil, salt, and pepper. Roast for 15-18 minutes, until almost fork tender.

Toss with maple syrup and melted unsalted butter. Return to oven for another 8-10 minutes until caramelized.

Serve immediately. Top with parsley or more maple syrup, if desired.
