Let's get started!
Small-dice 3/4 of the salmon.
Pulse the rest of the salmon with paprika, dijon mustard, mayo and lemon juice.
Mix diced salmon, the paste, panko, scallions, yellow onion, salt, and pepper.
Divide into patties and refrigerate for 30 minutes.
Combine all the garlic herb sauce ingredients.
Coat patties with panko and cook on a skillet about 4-5 minutes per side.
Assemble burgers with brioche buns, the sauce, and toppings.
