Make the whipped ricotta

First, cook the lasagna noodles per package directions. Then, combine ricotta, basil, lemon zest, and olive oil in a food processor.

Cook the cherry tomato sauce

Cook down the cherry tomatoes in a skillet with garlic, basil, salt and pepper.

Cook the zucchini

In a skillet, cook the sliced zucchini and yellow squash with salt and pepper until softened.

Assemble

Assemble the lasagna. First the ricotta on a cooked lasagna sheet, then the tomato sauce, zucchini, basil, and cheese.

Repeat layers

Repeat until you get about 3 layers.
