Mediterranean Grilled Chicken Salad

- 2 heads romaine lettuce, chopped
- 6 Roma tomatoes, diced
- 1 cucumber, diced
- 2 avocados, diced
- 1 cup artichoke hearts, roughly chopped
- 1 cup Feta cheese, cut into cubes (about 8oz)
- 1/2 cup pitted Kalamata olives, halved
- Olive oil for chicken
Simple Mediterranean Chicken Marinade
- 4 chicken breasts, pounded to 1/2 inch thick
- Juice of 1 lemon
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Mediterranean Dressing
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 2/3 cups extra virgin olive oil
- 1 teaspoon dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 tablespoon crumbled feta
- Salt and pepper to taste
In a Ziploc bag, add the marinade ingredients and the chicken breast, and marinate for about 15 minutes while you prep the vegetables. Keep in the fridge for safety.
Meanwhile, combine all the Mediterranean dressing ingredients in a mason jar and shake well.
Heat some olive oil on a grill pan to medium heat. Grill chicken on both sides, about 6-8 minutes each side until cooked through or until internal temperature reaches 165 degrees F. Transfer to a plate and rest it for 10 minutes. Slice.
Toss all prepared salad ingredients in a bowl. Top with sliced chicken and serve with Mediterranean dressing.
