Ingredients

  • 1 bunch kale
  • 2 to 4 teaspoons apple cider vinegar or lemon juice or to taste
  • A generous drizzle of olive oil
  • A pinch of salt

Instructions

  • Remove stems from leaves. Discard stems.
  • Chop kale leaves and place in a large bowl.
  • Add a generous drizzle of olive oil and about 2 teaspoons apple cider vinegar or fresh lemon juice. If you want more acidity, you can add another teaspoon of vinegar or lemon juice, to taste. Add a pinch of salt.
  • Massage with your hands for 1-2 minutes, until softened and tender. You'll notice that the kale will reduce. Make sure you don't massage for too long, or it will become mushy.
  • Now, your kale is ready to be used for salads. Try my Roasted Cauliflower and Kale Salad with Lemon Tahini Dressing! Enjoy!
