Ingredients

  • 2 heads romaine lettuce, chopped
  • 6 Roma tomatoes, diced
  • 1 cucumber, diced
  • 2 avocados, diced
  • 1 cup artichoke hearts, roughly chopped
  • 1 cup Feta cheese, cut into cubes (about 8oz)
  • 1/2 cup pitted Kalamata olives, halved
  • Olive oil for chicken

Simple Mediterranean Chicken Marinade

  • 4 chicken breasts, pounded to 1/2 inch thick
  • Juice of 1 lemon
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Mediterranean Dressing

  • 3 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 2/3 cups extra virgin olive oil
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 tablespoon crumbled feta
  • Salt and pepper to taste

Instructions

  • In a Ziploc bag, add the marinade ingredients and the chicken breast, and marinate for about 15 minutes while you prep the vegetables. Keep in the fridge for safety.
  • Meanwhile, combine all the Mediterranean dressing ingredients in a mason jar and shake well.
  • Heat some olive oil on a grill pan to medium heat. Grill chicken on both sides, about 6-8 minutes each side until cooked through or until internal temperature reaches 165 degrees F. Transfer to a plate and rest it for 10 minutes. Slice.
  • Toss all prepared salad ingredients in a bowl. Top with sliced chicken and serve with Mediterranean dressing.
