Watermelon Popsicles (4 Ingredients)

These watermelon popsicles are my favorite summer treat. They are so refreshing and naturally sweetened. It takes just 5 minutes of active prep time and the rest is just waiting for them to freeze!

Ingredients

  • 4 cups diced seedless watermelon rind removed
  • 1 cup fresh or frozen strawberries stems removed and roughly chopped
  • 1 tablespoon fresh lime juice or to taste
  • 2 tablespoons honey or to taste

Instructions

  • Make sure you have popsicle molds ready. This recipe makes enough for 6 standard popsicles.
  • In a blender, blend the watermelon, strawberries, lime juice, and honey until smooth and fully incorporated, scraping the sides of the blender if needed. If desired, add more lime juice or honey to taste.
  • Evenly pour the mixture into the popsicle molds and assemble, leaving about ⅓ inch gap at the top to allow for expansion. Freeze for at least 4-6 hours or preferably overnight. Tip: For ease, use a measuring cup with a spout or a small pitcher to pour the mixture.
  • To release, run each popsicle under warm water for a few seconds to loosen it up, and then pull until released.

Notes

  • Pick a ripe and sweet watermelon: Look for a heavy watermelon that has a yellow spot, which means it’s been sitting on the ground, ripening until sweet. Tap it a few times – if it sounds “hollow,” it’s juicy.
  • How long to freeze for: At least 4-6 hours, preferably overnight.
  • How long will they last? About 2-3 months in the freezer.
  • Strawberries add body and texture to these popsicles, which I really like. But if desired, you can omit them and just add more watermelon to the blender.
 
Substitutions and variations:
  • Strawberries: Fresh or frozen work fine. If desired, omit the strawberries.
  • Honey: Maple syrup, simple sugar syrup.
