Watermelon Mango Salad

The ultimate summer fruit salad! Refreshing watermelon and sweet mango are tossed with crisp cucumbers, salty feta, and fresh herbs in a delicious honey lime dressing.

Ingredients

  • 3 to 4 cups fresh cubed watermelon seedless
  • 2 ripe mangoes peeled and cubed
  • 1 ½ cups English cucumber, sliced
  • ¼ cup basil leaves, sliced loosely packed, fresh
  • 2 tablespoons fresh mint leaves, sliced
  • ½ cup crumbled feta cheese plus more for garnish
  • 1 cup fresh blackberries

Honey Lime Dressing:

  • Juice of 1 ½ limes plus more to taste
  • 1 tablespoon extra virgin olive oil
  • 1 to 2 tablespoons honey to taste
  • A pinch of sea salt

Instructions

  • Combine: In a bowl, combine the watermelon, mangoes, cucumbers, basil, mint, and feta. Set aside.
  • Make the dressing: In a bowl, whisk the dressing ingredients until evenly combined.
  • Toss and serve: Add the dressing, and gently toss to combine, being careful not to break the fruit. Top with blackberries and garnish with more crumbled feta on top. Serve immediately.

Notes

  • Mango varieties: Use Honey mangoes (aka ataulfo mango) for a smooth, non-fibrous texture. Avoid "Tommy Atkins" mangoes if possible, as they are fibrous.
  • Ripe mangoes yield slightly to gentle pressure, smell aromatic, and are yellow with orange or pink tones (very few green spots).
  • Pick a ripe watermelon: Select a seedless watermelon that has a yellow field spot to ensure ripeness and feels heavy for its size.
  • Chill the fruit in the fridge before dicing to maximize crispness!
  • Toss gently to prevent bruising or breaking the fruit. They can be a little delicate.
  • Olive oil: You’ll be surprised at how good a little drizzle is! If you’d rather not use oil, replace with more fresh lime juice.
  • Make ahead: Dice fruit and cucumbers up to 1 day in advance and refrigerate. Prepare the dressing separately. Combine just before serving.
  • Storage: This salad is best served fresh, but leftovers will store for 1 day in the fridge. After that, it will get soggy.
 
Substitutions and Variations
  • Citrus: Substitute lime juice with lemon juice, or blend it with fresh orange juice.
  • Cheese: Swap feta for queso fresco, cotija, fresh mozzarella pearls, goat cheese, or grilled halloumi.
  • More fruit mix-ins: Mix in or garnish with blackberries, blueberries, strawberries, or cherries.
