People are making everything with kale, especially salads. Like, all types of kale salads. Seriously. And it it soooo good. Yup, I love kale, obviously! Plus, it’s super good for you.
But…when raw, it can be so tough and bitter! Most people probably don’t think about prepping it so it can be used appropriately in salads. Well…by massaging kale (YES! MASSAGING!), you can get super tender and delicious kale leaves, perfect for a light salad.
Benefits of Massaging Kale
- It softens and tenderizes kale leaves by breaking down tough fibers
- It reduces the bitterness of raw kale and brings out great natural flavors

How to Massage Kale
Ingredients
- 1 bunch kale
- 2 to 4 teaspoons apple cider vinegar or lemon juice - or to taste
- A generous drizzle of olive oil
- A pinch of salt
Instructions
- Remove stems from leaves. Discard stems.
- Chop kale leaves and place in a large bowl.
- Add a generous drizzle of olive oil and about 2 teaspoons apple cider vinegar or fresh lemon juice. If you want more acidity, you can add another teaspoon of vinegar or lemon juice, to taste. Add a pinch of salt.
- Massage with your hands for 1-2 minutes, until softened and tender. You'll notice that the kale will reduce. Make sure you don't massage for too long, or it will become mushy.
